Preheat oven to 400°F.
Step 2
Roll out puff pastry into a 12-inch rectangle.
Step 3
Core and slice apples in half through the stem.
Step 4
Slice apple halves crosswise in ¼ slices.
Step 5
Brush strawberry preserves over puff pastry.
Step 6
Top puff pastry with overlapping sliced apples, leaving a 1 ½ inch border.
Step 7
Crimp edges of pastry over apples, to seal.
Step 8
Drizzle honey over apples.
Step 9
Bake at 400°F degrees for 25 minutes, until puff pastry is cooked through and golden.
Step 10
Allow to cool about 15 minutes and cut into squares.
Step 11
Serve warm with ice cream or yogurt.
