Step 1
Preheat the oven to 350 degrees.
Step 2
Cut the apples in half lengthwise and use a small spoon to scoop the seeds and core out. Using the spoon, scoop out the center of the halves a little more to form a small cavity. Place apples into a large baking dish. Set aside
Step 3
In a medium bowl, stir together oats, brown sugar, flour and cinnamon. Add 3 Tbsp light butter and work it in until crumbly, using a fork or pastry cutter. Mix until crumbly.
Step 4
Spoon the oat mixture evenly into the centers of the apples.
Step 5
Drizzle the tops of the apples with 1 Tbsp melted light butter. The melted light butter helps keep the apples moist and tender as they bake.
Step 6
Cover with foil and bake for 10 minutes.
Step 7
Uncover and bake for another 25-30 minutes or until tender.
Step 8
Serve with dollop of cool whip or low point vanilla ice cream and/or sugar free caramel sauce, if desired for additional points!
