Step 1
Preheat your oven to 350 degrees. Prepare a rimmed baking sheet with tinfoil. Set aside. In a skillet over medium to medium high heat, cook bacon until crisp. Drain on paper towel and set aside.
Step 2
Get out all of your ingredients.
Step 3
Slice off and remove tops from your crusty buns. Tear out inside of each bun as best you can. Do not pull out too much of the inside that you make a hole through the side of the bun. Use these bread pieces for another use. I usually feed it to the birds! Place buns on top of your prepared sheet.
Step 4
Sprinkle and press down cheese inside each bun.
Step 5
Sprinkle bacon pieces on top of the cheese or whatever meat you're using. Chop peppers and sprinkle some on top of the bacon.
Step 6
Sprinkle some green onion too.
Step 7
Gently crack each egg into each bun, on top of the peppers. Sprinkle a pinch of salt and pepper on top of each egg if desired. Bake for 15 minutes.
Step 8
Remove from oven and add some more cheese on top. Return pan to oven for another 5 to 10 minutes. Timing will be determined by how you like your eggs.
Step 9
Chop green onion and sprinkle on top of egg baskets if desired. Serve immediately. Enjoy every bite!
