Step 1
Heat a medium (about the same diameter as the tortilla) non-stick pan over medium heat and cook bacon until crisp. Remove from pan and place on paper towel lined plate. Cut bacon into pieces and set aside.
Step 2
Wipe out pan with paper towels and place over medium heat. In a small bowl whisk eggs until they turn a pale yellow color throughout. Season with salt and pepper. Add butter to pan and let it melt completely, swirl the pan around to distribute butter.
Step 3
Pour in the whisked eggs into the hot pan and let cook briefly, about 1 minute. Sprinkle half the cheese over the eggs, then place the tortilla over the top of the eggs and cheese. Let cook an additional 1 minute. Carefully flip the tortilla over so the eggs are now facing up and tortilla is on the bottom of the pan.
Step 4
Sprinkle with the remaining cheese and add the chopped bacon. Fold the tortilla in half, creating your quesadilla and cook until cheese is melted both sides are golden brown. Remove from the pan and cut into triangles. Enjoy right away.
