Step 1

Preheat oven to 350F and line a baking sheet with parchment paper

Step 2

In a large bowl, add chopped cauliflower and drizzle oil over top, season with sea salt and toss to coat. Transfer cauliflower to the baking sheet and place in the oven to bake for 15-20 minutes until cauliflower is tender and fully cooked

Step 3

Remove cauliflower and transfer to a food processor, add all other ingredients except for cheddar and blend to fully combine

Step 4

Remove mixture from food processor and place in a medium sized oven proof dish and mix cheddar in

Step 5

Place in the oven for 15-20 minutes until fully warm and bubbly

Serve with your favourite corn chips, crusty bread and veggies!
