Easy Coffee Pudding

cornstarch

sugar

cinnamon

salt

milk

espresso powder

vanilla extract

Whisk the cornstarch, sugar, cinnamon and salt in a 2-quart heavy saucepan. Gradually whisk in the milk. Boil the mixture over medium-high heat, whisking constantly, about 2 minutes. The mixture will be thick when done. Remove the saucepan from the heat. Whisk in the espresso and vanilla until smooth.

Transfer the mixture to a bowl and cover with plastic wrap. Chill the bowl in the fridge until cold, at least 2 hours. Serve the pudding chilled.

I thought the cinnamon to coffee ratio was fine. I tasted the coffee perfectly and it was just the right amount of sugar, not too sweet at all. It was good but not amazing.

This is very easy way to make pudding. I should have read reviews first. As some one said, it was too much cinnamon and did not taste like coffee. I will cut down cinnamon next time, and will try to add cocoa powder. Also, it took longer than 2 minutes to get right consistency. (more like 5 minutes. 

There was too much cinnamon and I couldn't taste the coffee and the consistency of the pudding was more like jello. So it turned out more like cinnamon jello. Even though it didn't turn out like it was supposed to, it still had a good flavor, the wrong flavor, but a good one.

This is a great shortcut to making pudding!  It set up very well (it takes 10 minutes at a boil and I added chocolate chips as Melissa suggested.  Fantastic!!!

I love Melissa's pudding recipes.  If you have trouble with consistency, whisk sugar and cornstarch in the pan first, then add milk.  The key is to not over mix.  Cornstarch is NOT like flour, it requires less whisking to thicken.  Also, if custard texture is what you're looking for, this recipe is egg-free so you will not get an egg-y texture.  It's just really thick, congealed milk.  But we love it. It's way better than snack packs or pudding out of a box! :

Puddind doesn't set (creamy is not pudding, stays to watery needs binding. We made it according to recipe. I wouldn't give it a rating but I had to give it @ least a one to enter review.

My pudding came out nice and creamy.  I let my milk come to a slight bubble before adding the cornstarch/sugar mixture and then whisked it for about 3 minutes to insure that the dry ingredients were nicely incorporated.  Instead of cinnamon, I added a tablespoon of unsweetened cocoa so it was a mocha pudding.  I had no idea how easy it was to make homemade pudding and I have all the ingredients on hand all the time.  I love knowing the basics and I can flavor it so many ways.  Thanks Melissa

First try was terrible. Didn't set right and all I tasted was cinnamon, no coffee. Second try was much better after I left out the cinnamon

Texture was awful , the taste was gross...This was disgusting.. I had to throw it out! I did everything according to the recipe!  total waste!
