Wash and thinly slice the cucumber. Peel and dice the mangoes into bite-sized pieces. Finely dice the red onion and chop the cilantro and mint.

In a small bowl, whisk together the lime juice, olive oil, honey, and a pinch of salt and pepper. Add chili flakes if you prefer some heat.
