Step 1

Preheat oven to 350 degrees.

Step 2

Spray baking dish liberally with cooking spray.

Step 3

Spread a layer of sauce on bottom of dish.

Step 4

Layer eggplant cutlets atop sauce.

Step 5

Sprinkle half of mozzarella and parmesan over cutlets.

Step 6

Pour remaining sauce over.

Step 7

Sprinkle with remainder of cheeses.

Step 8

Cover and bake 35 minutes.

Step 9

Uncover; bake 5-10 more minutes or until cheese is melted and sligthly brown.
