Ingredients: 3 tablespoons vegetable oil; 1 tablespoon flour; 1/4 cup chili powder; 2 cups chicken stock; 10 ounces tomato paste; 1 teaspoon dried oregano; 1 teaspoon ground cumin; 1/2 teaspoon salt

Easy Enchilada Sauce

In a medium saucepan heat oil, add flour, smoothing and stirring with a wooden spoon. Cook for 1 minute. Add chili powder and cook for 30 seconds. Add stock, tomato paste, oregano, and cumin. Stir to combine. Bring to a boil, reduce heat to low and cook for 15 minutes. The sauce will thicken and smooth out. Adjust the seasonings. Serve atop your favorite enchiladas.

I am always trying new recipes for our most beloved dishes. My husband is Texan and he loves enchiladas. He grew up on canned sauce and I didn’t care for the taste so I decided to learn how to make from scratch sauce. This is a good enough sauce but honestly too tomato-y. I will substitute the tomato paste with sauce so it’s not so much like spaghetti sauce and more of a traditional Mexican red enchilada sauce. 

This sauce is excellent. Once you make enchilada sauce from scratch you will never want canned again. Love this recipe.

Easy and authentic—my go-to sauce for years (and it freezes perfectly, too!). Depending on how I’m using the sauce, I may add a bit more chicken broth to loosen it up. However, with regular chicken enchiladas, I love the rich, thickness of this sauce. The flavors are incredible. This said, if you prefer the flavor profile of pre-made, canned/bottled sauces, the heartier, more authentic flavors in this version may not speak to you.
