Preheat the griddle or non-stick skillet to medium heat until a drop of water sizzles when dropped on it.

In a large bowl, sift together flour, sugar, baking powder, and salt.

In a separate bowl, quickly whisk together melted butter, milk, and eggs. Gradually pour the wet ingredients into the bowl of dry ingredients and whisk just until well-combined. The batter will be a little lumpy.
Step 4
Grease the griddle with butter. Spoon 1/4-1/3 cup of pancake batter onto the preheated griddle. Cook until bubbles appear and start to pop, about 3-4 minutes. Flip the pancake over with a spatula and cook the other side for 1-2 minutes, or until golden brown. Repeat until all batter is used up.
