Step 1

Place butter, treacle and brown sugar in a small saucepan, and heat until melted.

Step 2

Cool in saucepan for approximately ½ hour.

Step 3

Add egg yolk and mix well.

Step 4

Place ginger, mixed spice, bicarbonate of soda and flour in a mixing bowl and mix well.

Step 5

Add butter mix and stir to combine.

Step 6

Preheat oven to 180C-200C.

Step 7

Roll mixture into walnut-sized balls and place on a baking tray lined with baking paper. Bake for 10-12 minutes.

Step 8

To make gingerbread men, roll out mixture between sheets of baking paper, the mixture is thick and sticky, to ½ cm thick, and use a biscuit cutter to cut out gingerbread men or 3cm rounds.

Step 9

Place on an oven tray lined with baking paper, leaving 3cm between each biscuit. Bake for 7-10 minutes.

Step 10

Leave on tray for 5 minutes before removing. Cool on a cake rack.

Step 11

Store biscuits in an airtight container.
