Step 1

Preheat an oven to 180°C. Grease a 26cm bundt tin.

Step 2

Whisk butter, sugar and eggs until pale and creamy. Add flour, butter milk and lime juice and beat until just combined. Pour into the bundt tin and bake for 40-45 minutes or until an inserted skewer comes out clean.

Step 3

Leave to cool in tin for 5 minutes, then turn onto a serving plate.

Step 4

While the cake is cooking, prepare the syrup. Place sugar and water in a small saucepan over a high heat and bring to the boil. One sugar has dissolved, add lime juice and rind. Bring back to the boil, then remove from heat.

Step 5

While the cake is still hot, pour over the syrup.
