Preheat Oven to 375°F

On a rimmed baking sheet, toss cauliflower in olive oil and 1 tsp of salt

Cook for 20 minutes
Step 4
Remove from oven
Step 5
In a large bowl toss chicken thighs with chutney and nestle between partially cooked cauliflower
Step 6
Top chicken with any leftover chutney from the bowl.Place sheet pan back in oven and cook an additional 25 minutes until chicken is cooked through and cauliflower is crispy
Step 7
For crispy chicken broil for 5 minutesSprinkle with cilantro and thinly sliced red onion
Step 8
Serve over cooked rice, quinoa or couscous
