Step 1
Preheat a fan-forced oven to 180°C/350°F (fan forced) and line a slice tin (27 x 18cm) with baking paper.
Step 2
Spread the nuts/ seeds and coconut evenly on the tray and toast in the preheated oven for 5 minutes.
Step 3
In a small bowl mix the vanilla, cinnamon, ginger, cardamom and sweetener. Pour over the nut/seed/coconut mix.
Step 4
Sprinkle over the sesame seeds and toast for 20 minutes.
Step 5
Allow to fully cool in the fridge or freezer before slicing into squares.
Step 6
In an airtight container in the fridge or freezer. If you need to stack them, separate with baking paper.
