Export 4 ingredients for grocery delivery
Step 1
Put the yeast, 2/3 of the flour, the tsp of sugar and the water in a bowl (I use a KitchenAid mixer with the dough hook for this but you can do it by hand). Do NOT add the salt just yet, it would kill the yeast...Use the first speed of the mixer to blend everything together, then let it rest for 20mn.
Step 2
Turn the mixer on (second speed) and add all your other ingredients. Let the mixer knead the dough for 12-15mn. The dough will be sticky when you're done; this is perfectly normal. Use a little bit of flour if you need to transfer it to another bowl.Cover with cling film and place it in the fridge for 3 days!
Step 3
Take the dough out of the fridge a few minutes before you cook the pizza. The dough should be about 50% bigger or have doubled in size.
Step 4
Preheat the oven at 270 degrees Celsius (or 250 minimum) with a pizza stone inside if you have one. Using your floured hands (and a rolling pin if you prefer), roll out or "stretch out" the dough (I like it when the crust is very thin but it's up to you). Add the toppings of your choice, drizzle with olive oil and slide it onto your pizza stone for about 10mn!
