Step 1
Preheat oven to 325°F and line a baking sheet with parchment paper or a silicone mat.
Step 2
In a large bowl, stir together the peanut butter and maple syrup.
Step 3
To the bowl, add the rolled oatmeal and protein powder. Stir until evenly coated.
Step 4
Spread mixture over top of the baking sheet with ample space between clusters. Lightly spray granola with high heat oil.
Step 5
Bake in oven for 15-20 mins, watching to make sure edges aren't burning. Remove from oven and set aside to cool.
Step 6
Transfer cooled granola to a large bowl with lid for storing. Add chocolate chips or preferred mix-ins and stir to combine. Store sealed at room temperature for 3-5 days, or up to several weeks in the refrigerator.
