Don&rsquo;t let your cucumbers go bad or freeze in the fridge. Refrigerator pickles are easy to make, and there's no need for kettle steamers, special jars, and vacuum-tight lids. Make an extra batch to top off grilled burgers, diced for fresh tartar sauce, as the perfect side to a simple sandwich or just a quick, tangy snack. The pickling liquid can be used with other vegetables as well such as beets, onions and carrots depending on the season. Plus, unlike store-bought pickles, these scrumptious homemade pickles are low in sodium.

Easy Refrigerator Pickles

pickling cucumbers (about 2 pounds)

onion

white vinegar

sugar

salt

mustard seeds

celery seeds

turmeric

red pepper

black pepper

garlic cloves, thinly sliced

Place 3 cups cucumber in a medium glass bowl; top with 1 cup onion. Repeat procedure with the remaining 3 cups cucumber and remaining 1 cup onion.


Combine vinegar and remaining ingredients in a small saucepan; stir well. Bring to a boil; cook 1 minute. Pour over cucumber mixture; let cool. Cover and chill at least 4 days.


Note: Pickles may be stored in the refrigerator for up to one month.


I think this recipe would be more helpful if the brine amount was doubled.  Where do I find a recipe for these that are dill instead of sweet?

does the brine need to cover the top of the cucumbers? It barely covers half. I've never made cucumbers before

I suggest doubling the brine.  I only had 4 cups of cucumbers and one medium onion and only half of the vegs were submerged.  I had to put them in a 9x13 Pyrex to spread them out and I will have to toss them now and then.  I would make more brine but I ran out of white vinegar.

My family loves these pickles--I have been making them every summer by the gallons!  They are easy and super yummy!

I usually use refrigerated minced garlic rather than using fresh--makes the recipe even easier!  Plus I use Vidalia or other sweet onions--yummmm.  And I leave out the crushed red pepper so pickles are not so "bitey" so grandbabies can eat them.

I made these pickles and mine turned out tasting better than the store bought bread and butter pickles 4$. Will be giving away 2 jars, keeping some for me. Next I am trying the dill!

Love the pickles! Cut back on the salt, added more red pepper flakes, sliced jalapenos, seeds and all. Couldn't get any easier, and although I do make pickles the "old fashioned" way, this recipe is great when one has an abundance of pickling cukes with little time to use them before they turn bad. I am curious about what type of salt to use.  I assume pickling salt.

These are my all-time favorite pickles! They seriously make store bought pickles look shameful, and I suspect these are much better for you as well. I hate all the preservatives that go into our food. (Yuck!!)

I make these every year and they are extremely easy and delicious!  Use a food processor and you are done in a snap.

Not a pickle maker but willing to give these a try.  i like bread and butter with a little "kick."  If you added a little jalapeño, would these qualify???

so, so easy.  used the mandoline to make thin slices for both the cucumbers and onion.  nice and tasty, wonderful texture.

These are so easy and delicious.  I found them a little sweet for my taste, so will probably cut the sugar down to 1/2 c. or less next time.

This is almost the same as an old family recipe but with less sugar.  I add a chopped sweet pepper for color and flavor.  To those who asked if the liquid should cover the veggies, the answer is that it will eventually as the cucumbers wilt and give off their own liquid.

FABULOUS &amp; EASY TO MAKE.  Made last year and couldn't wait for our cucs to come in to make again.  They last longer then a month in the fridge.

These pickles tasted great!  Not too sweet or salty, just right.  I didn't have white vinegar, so used cider vinegar, and they turned out just fine.  A nice, easy recipe I will certainly make again.

I have made these pickles many times. I have given jars of pickles as gifts and everyone loves them. The only thing I have changed is to leave out the red pepper flakes for a milder taste, but the red pepper gives it an extra "kick"that some people really like.

I ended up making double the amount of the liquid solution because my cucumber/onion mix was only half covered.  I also put about one and a half the amount of crushed red pepper for an added kick.  Good pickles though.

This is a great recipe because it is simple &amp; straight-forward. Can these be canned in a water-bath? I can't eat all these alone, but would like to make &amp; save for later.

Don't know how the pickles will turn out, but easy recipe.  Question for those in the know, should the liquid for this recipe cover the veggies?  When I put it all together the liquid didn't cover the top layer of cucumber slices.  The top layer is just kind of half way submerged.

Very tasty; I decreased the sugar to 1/2cup so it wasn't as sweet.

I give this recipe 5 Stars because we can't live without it!  I don't make conventional pickles like Mama used to do, but I have to have a jar of these in the refrigerator at all times during cuke season!  They are fantastic either with a sandwich or as a side-dish (ala cucumber-onion salad).  My husband, who refuses to touch a cuke in any other form, wants them with just about every meal.  Beware, though, the turmeric will make the liquid stain your dish-towel, wooden spoon, counter-top... you name it!

These homemade pickles couldn't be easier—no fancy kitchen equipment required!
