Step 1

Halve the olive bread horizontally.

Step 2

Layer on the Caponata followed by the rocket/arugula, tomatoes (seasoned with salt and pepper), cheese, salami and basil.

Step 3

Drizzle a little olive oil over the top layer of bread and place onto the sandwich.

Step 4

Slice into 4 servings and serve.
