In a bowl, whisk together the eggs and 1 tbsp sour cream. Season with salt and pepper.In a nonstick pan, over a medium heat, melt the butter before adding the egg mixture. Cover and let cook for a couple of minutes. Once the egg begins to set, add the remaining sour cream and all the fresh ingredients to one half of the omelette.Fold over and slide onto a plate.
