Step 1

Place ginger, garlic and chilli into mixing bowl and chop 15 sec/speed 7. Scrape down sides of mixing bowl with spatula.

Step 2

Add all remaining satay sauce ingredients and cook 3 min/98°C/speed 1, then blend 30 sec/speed 10. Transfer sauce into a thermal serving bowl or other large bowl and set aside.

Step 3

Place simmering basket onto mixing bowl lid, then weigh rice into it. Rinse rice until water runs clear and set aside.

Step 4

Place water into mixing bowl. Place Varoma dish into position and weigh chicken into it. Secure Varoma lid and cook 14 min/Varoma/speed 2.

Step 5

Remove Varoma and set aside. Insert simmering basket with rice. Place Varoma dish back into position and stir chicken to ensure even cooking. Insert Varoma tray, then weigh carrot, broccolini or cauliflower, capsicum and brown onion onto it. Secure Varoma lid and cook a further 10 min/Varoma/speed 4.

Step 6

Add sugar snap peas onto Varoma tray, secure Varoma lid and cook 3 min/Varoma//speed 2 or until chicken is cooked through. Transfer chicken and vegetables into thermal serving bowl with sauce and stir to combine. Remove simmering basket with aid of spatula and set aside. Serve satay chicken and vegetables with rice.
