Step 1
Bring a large pot of water to boil and add in the noodles.
Step 2
Using a pair of chopsticks, separate the noodles and cook for 2 minutes.

Immediately drain and rinse the noodles under running tap water. This will stop the cooking process and firm up the noodles.

Drizzle 1 tbsp sesame oil and toss the noodles well to prevent them from sticking together. Set aside.

Add 1 tbsp vegetable oil in a wok and saute the garlic until fragrant but not burned.

Add in bean sprouts and spring onions and stir fry to 30 secs.

Remove and set aside.

Add another tbsp of oil to the wok and add in the noodles.
Step 9
Let them sit in the hot wok for one minute to crisp up before tossing them over.
Step 10
Add in the sauces and toss well over high heat. Taste and adjust with more seasoning if needed.
Step 11
Add in the cooked bean sprouts and spring onions and mix well.
Step 12
Turn off heat. Sprinkle with toasted sesame seeds and serve.
