Easy Taco Casserole

beef

salsa

mayonnaise

chili powder

tortilla chips

Colby cheese

Monterey Jack cheese

In a large saucepan, cook beef over medium heat until no longer pink; drain. Add the salsa, mayonnaise and chili powder.

In an ungreased 2-qt. baking dish, layer half of the meat mixture, chips and cheeses. Repeat layers. Bake, uncovered, at 350&deg; for 20-25 minutes or until heated through. Just before serving, top with tomato and lettuce.

Great concept!  I'm going to use kidney beans and make it meatless.

This was delicious!  I made a mistake and cut the lettuce instead of shredding it.  I also should have chopped the tomatoes smaller.  It was still good though.  My husband suggested I make this often.  Thanks for the good recipe.

Was super easy!!!! and a different option for sunday dinner. What would make it better is to have Sour Cream, Maybe some avacados and similar type items in there. Also what I did is I put some crushed tortilla chips, on the bottom as a bottom layer and then layered as directed in the recipie. I also added olives as well.  Parents are enjoying it now and hubby and I will later.

I used 1/4 cup sour cream instead of all the may to cut down on the fat...seeing as I didn't have any chips. I added 1/2cup instant rice, a can of black beans and let it sit on the stove for about 10 min. When I topped it with cheese I also sliced some jalapenos and put them on half, the kids find it too spicy with them;) Then I served them on Cheddar Corn Biscuits(also a recipe from TOH) they are fantastic and the kids are asking for 2nds!

This recipe has good flavor, is easy to make and is one my whole family enjoys.

switched out mayo for sour cream, still tastes good:) defiantly make it again, super easy recipe!

We really liked this dish and I think it could be modified to add onions, green peppers, and corn too!

Made for husband and me last night and both agreed was soooo much better than regular tacos!  Much easier and not as messy to eat.  Also added sour cream to top after baking.  Will definately be making again!

Do yourself a favor and make a taco salad instead. I made this exactly as the recipe said; my first mistake. I usually add more spices to boost flavor. This was soooo bland. Easy is not always better.

I love this recipe! I found this in Taste of Home quite a few years ago & have been making it ever since. I always have to double it :) And even then my family eats it all!  Be careful not to over-bake because the cheese on top will get hard. I have served this to other families, at parties, and potlucks always with rave reviews. Sometimes we serve it with the lettuce & tomato but sometimes we don't.

I got this mixed up with another recipe..forgot the mayo, added the salsa to warm refried beans and layered the beans over the chips before the meat layer.  Tasted great!

I didn't like how the crushed chips and grated cheese got hard together, like a whole layer on top of hardness you had to pick off. I saw another person say add the cheese later, maybe that would work but maybe the chips need to be on the bottom and the cheese put on top as is done in another wonderful recipe on TofH, turkey taco bake.  I agree with another reviewer that taco seasoning would be a lot better than just chili powder which was a bit spicy but bland.  Maybe it saved sodium if that is a concern, but it didn't really taste very good, at least not to me.

Very easy to make for a busy night.  I normally follow the recipe as written the first time and then tweek it. .  . Well I didn't have cream cheese.   I browned my meat and added a packet of low sodium taco seasoning and the water it called for.    Since I didn't have the cream cheese I used a whole jar of 12 oz salsa, a can of black beans (rinsed), freshly chopped jalapeno and tomatoes, and some corn.    I layered it as directed though I would be tempted to put a layer of chips on the bottom.   I did cover it while baking except for the last 5 minutes or so.  I was concerned that it would be dry since my meat mixture wasn't soupy.  Very good - every bit gotten eaten up by my college age children.

This is so easy and delicious! I found the chilli pepper just fine. I used Mexican cheese, not cream cheese, very yummy. My chips were not soggy.....I will put this on my favorite recipes!!

Instead having to cook up the meat and adding chili powder, I just used leftover taco meat that I had in the fridge from the tacos we had a couple nights before.  I also added some chopped onion.  Other than that, everything else was the same.  Thanks for the recipe and I will definitely make this again!

I made the recipe without changes and thought it was delicious.  Since there is only two of us I knew I would need to save some for leftovers so I only put the lettuce and tomato when I served each portion.

This was such an easy weeknight meal. The family loved it. I used half cheddar cheese and half Mexican blend as that's what I had. Other than that I stuck to the recipe. The  Chili Powder gave it a little kick. We all thought it was yummy!  Thank you for sharing I know I will definitely make this again!
