Step 1
Preheat oven to 375 degrees. Spray a large casserole dish or 9 x 13 baking dish with non stick spray for easy clean up.
Step 2
Bring a large pot of water to boil. (start the sauce while the water comes to a boil).
Step 3
Heat a large skillet over medium high heat. Cook sausage and onion until fully cooked and crumbly. Drain any excess grease if necessary.
Step 4
Boil pasta according to package directions, less 3 minutes so tortellini is just al dente. Firm on the outside but soft in the middle. (It will continue to cook with the sauce in the oven). When cooked, drain but do not rinse.
Step 5
Add marinara to the cooked sausage and onion. Bring to a simmer, stirring occasionally.
Step 6
Combine the cooked tortellini with the sausage marinara. Stir gently to not break up the pasta.
Step 7
Layer half the tortellini in a large baking dish and top with half the cheese. Top with remaining tortellini and finish with remaining cheese.
Step 8
Bake at 375 degrees for about 20 minutes until sides are bubbly and center is hot.
Step 9
Serve with a simple green salad and baguette if desired.
