Step 1

If you donā€™t have a Vitamix or high-speed blender, soak your cashews for 20-30 mins. and they will soften. It will make them creamier as they are blended.

Step 2

Put all ingredients, EXCEPT SALSA, into a blender and process until smooth and creamy.

Step 3

Pour into a bowl, add salsa, and enjoy!

Step 4

If you want, you can warm this in a small saucepan on low to low-medium heat. Stir regularly so it doesnā€™t burn. It will thicken even more as it heats up.
