Step 1

Place vinegar, sugar and salt in a large bowl. Stir until sugar dissolves. Add carrot. Toss to coat. Set aside for 20 minutes.

Step 2

Meanwhile, combine pork mince, lemongrass, garlic, ginger, coriander, breadcrumbs and egg in a bowl. Roll tablespoons of pork mixture into balls.

Step 3

Make Caramel sauce: combine honey, sugar, fish sauce, soy sauce and 1/4 cup water in a jug.

Step 4

Heat oil in a large frying pan over medium-high heat. Add meatballs. Cook, turning, for 5 minutes or until browned all over. Add honey mixture. Cook, turning meatballs occasionally, for 5 minutes or until meatballs are cooked through and sauce thickens slightly. Stir in lime juice. Sprinkle with chllli.

Step 5

Add cucumber and lettuce to carrot mixture. Toss to combine. Serve meatballs with rice and salad.
