Step 1
In a large bowl, mix together instant sugar free vanilla pudding mix, skim milk, pumpkin purée, and pumpkin pie spice.
Step 2
Fold in the thawed fat free cool whip topping. Chill for at least an hour in the refrigerator.
Step 3
Serve as is or with sliced apples, sliced bananas, pretzels, graham crackers, or Anise Reko Pizzelles, if desired.
