Step 1
Line a cookie sheet with parchment paper. Set aside.
Step 2
In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Set aside.

In a large bowl, with an electric mixer, cream together the butter, white sugar and brown sugar.
Step 4
Add the eggnog, egg, and rum extract beating until smooth.
Step 5
Add the flour mixture and stir until just combined.
Step 6
Fold in the white chocolate chips.
Step 7
Use a cookie scoop to scoop tablespoonful of the dough and place them on the prepared cookie sheet 1 inch apart.
Step 8
Chill in the refrigerator for 20 minutes.
Step 9
Heat the oven to 350F and bake for 15-18 minutes, until edges of the cookies are just beginning to brown.
Step 10
Allow to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
