Eggnog Mini Loaves

<p>A moist and flavorful loaf, with a taste of the holidays in every bite. I baked the loaves in 2 8x4 disposable loaf pan (one is a gift), and they baked up perfectly in 35 minutes. I did tent the loaves with aluminum foil to keep the top from getting too browned for the last 5 minutes. Both the eggnog and spice flavors came through, I didn’t think the rum flavor did, but that was fine by me, since I’m not the biggest fan of rum flavor. I’ll definitely keep this in the Christmas gift rotation mix, although I’ll probably swap rum extract for dark rum or possibly amaretto.</p>

We really enjoyed this recipe. The true eggnog flavor comes through, and with the nutmeg and cinnamon spices to boot, it truly tastes like eggnog in every bite. I liked the texture- I think due to the heaviness of the eggnog, it creates a more dense recipe. We made as loaves and also muffins. Great gift idea. Also smells great while baking!

Gave these delicious loaves as Christmas gifts. My friends & family loved them.  Only change I made was to add 1 teaspoon of vanilla & 3 of rum instead of the suggested 2 of each.  Yum.

Made these for Christmas  gifts. They freeze nicely and taste great. I also made them using muffin tins for a quick breakfast.

I made an eggnog glaze and gave this bread as gifts!  Everyone said this bread is delicious, so good that I could sell it and make a ton of money. I have made it twice now, once with rum and once with brandy extract.  Everyone says it is delicious with either one.  This bread will definitely go into my recipe collection.

delicious and moist.....somewhere in the comments someone said these were dry - don't overbake or they will be dry.  At 20-25 min I begin to check for doneness - also depends on size of pan (exact dimensions as recipe or you own which may be larger or smaller). Baking rule 101 - don't depend on the time stated in the recipe, it is just a guide - some ovens cook faster.

Thought this was a little bland so I added some fresh cranberries and chopped pecans. It really perked it up. Made about 30 loaves last Christmas for gifts. Plan to make more this year.

Everyone’s taste is different; to me, it’s missing something. Like it’s trying to be a bread or a pound cake, but couldn’t decide.. maybe sweeter? And with all the butter and eggnog you would expect it to be more moist. It was just ok, won’t make it again.

I felt it could use more zip, perhaps more nutmeg &/or cinnamon!!

I just made a batch and I am confused. Is the batter supposed to be so thick that you cannot pour into pans?!!! Followed the recipe to the letter.

Yum - perfect Christmas gifts! Quick and easy to make. Because I used an organic light eggnog without high fructose corn syrup, I anticipated the potential dry texture others mentioned. I increased both the eggnog and butter by 1 T each, and the texture is beautiful. Like others in the reviews, the batter doesn't pour into the pans - even with the increased liquids. It wasn't a thick paste, but I filled and leveled the pans with a spatula rather than a spoon or pour from the bowl. The texture of the finished product is more like a banana bread or moist coffee cake than a cake, for sure.  I provided each loaf with a small container of an eggnog/powdered sugar glaze to be added at the recipients' preference. This recipe is a keeper, and the mini-loaves are ideal for friends and neighbors overwhelmed with holiday treats!

OMGoodness! This bread is delish just as is, but if you don't glaze it you can toast it and, if it's possible, it's even better toasted with cream cheese!  Try it!!!

se are scrumptious and have all the flavors of the season.  They were easy to make and are moist and tasty.  I added sliced candied cherries and chopped pecans to add to the festive appearance.  My daughter and I glazed them and added red and green sprinkles and they made lovely, festive gifts.  The recipe is a keeper.

Easy to bake and loaves turned out like in the picture.  The taste is definately eggnog and the smell of this baking is wonderful...your kitchen will smell like a donut shop!  If you don't like eggnog or rum flavor than this recipe is not for you.  The taste is good but I think it would be amazing with the right glaze or frosting. Does anyone have a recipe for a glaze or frosting for this?  Also,  the recipe does say to pour the batter into the pans. The batter is so thick that this is not possible.  I used a measuring cup to fill the pans and then I had to spread it out. May try again if someone can supply a frosting/glaze recipe for this.

I made these as regular sized loaves (so I used 1 batch as 1 loaf instead of 3 mini loaves) and it turned out well.  In one batch, I mistakenly put only 1tsp of vanilla and 1 tsp of rum extracts...and it was actually better, I thought, than the recipes with 2 each.  The rum, in particular, is a little strong in this.  I will be cutting back to 1 tsp of the rum just because of my personal taste.  I think it would be enough.

very good! for sure a keeper! i made a glaze for mine using eggnog and milk- delish!!

This bread was just okay in our opinion.  Made two smaller loaves and ended up throwing one away.  My husband, daughter and myself found it to be kind of dry and just nothing to entice us to eat the second loaf.  It did taste like eggnog, which we love, but, was missing something.  Threw the recipe away too as not likely to make it again.

Am I missing something? Only see flour and baking powder for ingredients. Gave rating of one since I had to rate to review, but I can't  review what I can't make without ingredients.
