Enchilada Chicken

chicken breast

salt-free Southwest chipotle seasoning blend

olive oil

enchilada sauce

cheddar cheese

cilantro

Nice flavors.  I didn&#039;t have the chipotle seasoning, so I rubbed both sides of the chicken  with taco seasoning.  I also added a seeded, chopped jalapeno.  This comes together really quickly, and is a great weeknight dinner served with mexicorn and a tossed green salad.

Good quick meal if you want something that takes no trouble at all.  I served it with Spanish rice and cheesy refried beans.  I thought the favor could have been more infused into the chicken personally, but over all it was moist and had good flavor.

This is really good, and very easy!  We like sauce, so I used a whole can of enchilada sauce, and added a sprinkle of crushed tortilla chips along with the cheese and cilantro. A keeper for sure!!  VFE

Good and very easy to make!  My husband was not crazy about it, but I liked it.

We eat a lot of chicken, so I’m always looking for new ways to fix it. This was very easy, and really good. Since there are only 2 of us, I used the second 2 breasts to make chicken nachos!!  Two great meals from one recipe!!

This is a very good recipe and the simplicity and speed is amazing.  Will definitely make again.

Does anybody know if you bake this covered, or uncovered?

I went to 2 stores trying to find the SW Chipoltle blend seasoning and couldn't find it.   I went on line to see what it consisted of and discovered that Mrs. Dash makes it.  That SHOULD have been mentioned in the recipe.  From now on, I' m sticking with the Pillsbury recipes.

This was really tasty and easy. Will make again.
