Step 1
Add water and milk in a small sauce pan and heat it up to 35℃. Add the yeast to it and give it a mix. Let it rest for 10 minutes.Add to a big bowl bread flour, sugar and salt. Start mixing it slowly by hand until it's becoming a dough. Take it out of the bowl and knead it for another 10 minutes. For the dough into a ball and let it rest in a big bowl slightly oiled with a warm damp towel on top for 1 hour.
Step 2
After 1 hour the dough will be doubled in seize. Press the dough to get the air out. Flour your work space and place the dough on your work space. On the top of the dough you also add some flour. Start rolling the dough but make sure it's not too flat. Start cutting out the rounds out of the dough. The remainder of the dough you can roll out again. Add them to a backing sheet with some cornmeal and cover it with a damp towel and let them rise for 15 minutes.
Step 3
After 15 minutes put a pan on the stove on medium high heat and let the pan get hot. Put the muffins in the pan and bake them 3 to 4 minutes each side.
