Step 1

coat the beef with course salt and 1/4 teaspoon Ethiopian Berbere

Step 2

in a medium pot or small dutch oven on medium heat, melt butter

Step 3

add onions, garlic, ginger and remaining Berbere

Step 4

sauté until onions are soft, stirring occasionally

Step 5

add tomatoes and continue to cook, about 30-45 minutes total

Step 6

remove braising liquid and puree in a blender or food processor(optional)

Step 7

heat the same pan you used for the braising liquid on high heat and add cooking oil

Step 8

sear beef in small batches (don’t over crowd cooking surface), about 2 minutes per side or until golden brown.

Step 9

when searing is done return all the beef to the pan and pour the braising liquid into the pan. reduce the heat to simmer, cover, and cook for 20-30 minutes.
