Step 1
Cook the udon according to the package instructions. Reserve 1/4 cup cooking water and then drain well.
Step 2
Toss the drained udon with the pesto, and fry in a non-stick frying pan over medium heat, loosening with some cooking water if needed. Season with salt and pepper.
Step 3
Sprinkle on a generous amount of everything bagel seasoning. Finish with parmesan and seaweed, if desired.
