Step 1
Preheat the oven and cook the falafelsaccording to pack instructions. Meanwhile, putthe red cabbage in a bowl with the lemon juiceand salt. Scrunch the juice and salt into thecabbage using your hands, then leave to standwhile the falafels cook – scrunch twice moreduring the resting process.
Step 2
To make the salad, toss the cucumber,tomatoes, lettuce and coriander in a large bowl.Whisk the tahini, oil and garlic together andseason well. Tumble into the salad.
Step 3
Once the falafels are ready, drizzle the saladwith the pomegranate molasses. Serve with thecabbage, pitta, yogurt and hot peppers, if using.
