Step 1

Preheat the oven to 350 degrees F.

Step 2

Line a baking sheet with parchment paper.

Step 3

In a large bowl, cream the butter, brown sugar, and granulated sugar for 2 minutes.

Step 4

Add the eggs and vanilla to the sugar mixture and mix to combine. Scrape down the sides of the bowl with a spatula, if needed.

Step 5

Add the flour, oats, baking soda, cinnamon, and salt to the egg mixture and mix to combine.

Step 6

Add the chocolate chips, peanut butter chips, and toffee bits to the batter and mix to combine.

Step 7

Use a 1/4 measuring cup to portion the dough.

Step 8

Use your hands to form the portions into balls.

Step 9

Use the palm of your hand to flatten each ball into a thick disc.

Step 10

Place the discs on the prepared baking sheets, six at a time.

Step 11

Top the discs with sea salt.

Step 12

Bake the cookies until the edges are set and slightly golden brown, about 9-11 minutes. The centers will still appear slightly underdone, but they will continue cooking on the baking sheet.

Step 13

Allow the cookies to cool on the baking sheet for 5-10 minutes.

Step 14

Transfer the cookies to a wire rack to cool completely.

Step 15

Serve.
