Step 1
Place a pitcher onto mixing bowl lid, weigh in olive oil and set aside. Place Parmesan cheese into mixing bowl and grate 10 sec/speed 10.

Add arugula, pistachios, garlic and salt and chop 8 sec/speed 7. Scrape down sides of mixing bowl with spatula.
Step 3
Mix 2 min/speed 4, slowly pouring reserved oil onto mixing bowl lid, letting it drizzle in a thin stream onto rotating blades. Scrape down sides of mixing bowl with spatula.
Step 4
Add ricotta and mix 10 sec//speed 4. Transfer sauce into a serving bowl and set aside.
Step 5
Cook fettuccine on stove top with plenty of boiling and salted water (approx. 1 tbsp salt per 16 cups water) for 2-4 minutes. Drain the fettuccine and add sauce, to taste. Garnish with arugula and serve immediately.
