Step 1

In a large bowl, whisk together eggs and water. Season with salt and pepper.

Step 2

In a medium skillet over medium heat add 1Tbsp oil and chopped onions. Add turmeric on top and fry onions until light brown. Then add kale and lemon juice. Cook together for 2-3 min on a medium heat.

Step 3

Remove cooked Kale with onions and put aside. Make sure no onions are left in the pan and add remaining Tbsp of oil. Add 1/3 of the egg mixture into the skillet, moving to create a thin layer that covers the entire pan.

Step 4

Cook for 1 minute. Now add the rest of egg mixture. Add salt, pepper and cover and cook for 5 more mins. or until “almost done”.

Step 5

Add kale with onions to the center of egg wrap. Using a spatula, fold both ends over the filling. Remove from pan. Serve and Enjoy!
