Prepare the Rice

Rinse the rice under cold water until the water runs clear.

In a medium pot, add 2 cups water (or broth), 1 tbsp oil, and cumin seeds (if using). Bring to a boil.

Add the rinsed rice and salt. Reduce the heat to low, cover the pot, and cook for 12-15 minutes (for basmati rice) or 20-25 minutes (for brown rice) until the rice is cooked and the water is absorbed. Remove from heat and let it sit covered for a few minutes.

Prepare the Fish

Season the fish: In a bowl, combine turmeric, paprika, garlic powder, salt, pepper, and lemon juice. Rub this seasoning mixture onto the fish.

Cook the fish: Heat 1 tbsp oil in a skillet over medium heat. Place the seasoned fish in the skillet and cook for 4-5 minutes per side (depending on thickness) until golden and cooked through.

In the same skillet, you can sauté onion and garlic until softened and fragrant.

Add your choice of veggies (peas, corn, etc.), and cook for another 3-4 minutes until heated through.
