Put all ingredients (except for the chocolate chips) into a blender, beginning with the liquids.

Blend until smooth.

Fold in chocolate chips.

Pour into 24 paper-lined muffin tins.

Bake in a 400 degree oven for 20-25 minutes or until a toothpick inserted into a muffin comes out clean.
