Step 1
Place oranges in saucepan and boil for two hours, topping up water as necessary.

Allow to cool, then cut into pieces, place in a blender and blend until smooth (pips and peel can be included).

Preheat oven to 200C and line a 20cm round cake tin.

Beat eggs and sugar together.
Step 5
Mix in baking powder, stir in the pureed oranges and gently fold in almond meal.
Step 6
Mix in orange liqueur if using, then pour mixture into tin.
Step 7
Bake for 55 minutes, or until knife inserted in centre comes out clean. Allow cake to cool in pan before removing.
Step 8
Dust with icing sugar prior to serving.
