Step 1

Preheat your oven to 400°F.

Step 2

Cut the red potatoes in half (or quarters if they’re large) and spread them out onto a rimmed baking sheet lined with foil.

Step 3

Drizzle them with olive oil and sprinkle with the potato seasonings (listed in recipe ). Toss to coat.

Step 4

Pop them into the oven for 15 minutes.

Step 5

While the potatoes are cooking, lets flatten the chicken. I find it easiest to pop 2 chicken breast into a gallon size zip lock bag, close the bag and then beat them with a rolling pin until flattened a bit. This will help them cook faster.

Step 6

After the 15 minutes, remove the pan from the oven and push the potatoes to one side of the pan.

Step 7

Season with the chicken seasonings listed above.

Step 8

Cover each chicken breast with the french onion dip. An 8 ounce container of dip should cover 4 chicken breasts.

Step 9

Combine the breadcrumbs, parmesan cheese and melted butter. Stir until well combined.

Step 10

Sprinkle breadcrumbs onto chicken breast.

Step 11

Bake the chicken in the preheated oven for about 25 minutes, or until the internal temperature reaches 165°F.

Step 12

Serve with the potatoes and greenbeans or any side you like!
