Preheat oven to 350 F.

Put oil and sugar in bowl and blend well with either hand or stand mixer although a stand mixer is preferred.

Add slightly beaten eggs one at a time mixing thoroughly after each egg.

Sift flour, salt, and soda then add slowly to the mixer. The batter will be extremely dry.
Step 5
Hand grate the apples and add to the mixing bowl, the juice from the apples will loosen it up now.
Step 6
Finally, add the vanilla.
Step 7
If using, fold in pecans with a spoon or spatula.
Step 8
Pour into 2 greased and floured dishes or pans. I used 2 regular bread loaf pans - 5x9x3 .
Step 9
Bake for 60 – 70 minutes. More or less time, depending on your oven so watch it, using a toothpick to test for doneness.
