3 Heat 1 tbsp of vegetable oil in a frying pan. Pour in the beaten eggs and immediately cover with rice. Press down to break up the rice, and stir-fry until the eggs cook through.

4 Add 1/2 tsp of salt, a pinch of pepper, and 1/2 tsp of soy sauce to the rice and continue to stir-fry. Once evenly seasoned, add the minced leek and give the rice a quick stir before plating.

5 Add 1 tsp of sesame oil to the pan and briefly stir-fry the asparagus. Add [A] and bring to a boil. Stir in the potato starch thickener and simmer until thickened.

6 Pour the [Ankake sauce] on top of the fried rice.
