Step 1

1 Beat the eggs and mince the leek.

Step 2

2 Snap off the tough ends of the asparagus and peel the bottom 3 cm of each spear. Cut into 1 cm long pieces. Combine the [A] ingredients in a bowl. Mix the potato starch with 2 tsp of water to make a potato starch thickener.

Step 3

3 Heat 1 tbsp of vegetable oil in a frying pan. Pour in the beaten eggs and immediately cover with rice. Press down to break up the rice, and stir-fry until the eggs cook through.

Step 4

4 Add 1/2 tsp of salt, a pinch of pepper, and 1/2 tsp of soy sauce to the rice and continue to stir-fry. Once evenly seasoned, add the minced leek and give the rice a quick stir before plating.

Step 5

5 Add 1 tsp of sesame oil to the pan and briefly stir-fry the asparagus. Add [A] and bring to a boil. Stir in the potato starch thickener and simmer until thickened.

Step 6
