Step 1
Cut snake gourd into half and remove the seeds. Then, slice it diagonally into a thickness of about 4 mm per piece.

Except for the snake gourd and curry leaves, evenly mix all the dry ingredients in a bowl before adding water. Optionally, add 2 drops of red food colouring into the batter. The consistency of the batter should neither be too thick nor thin to enable it to coat the snake gourd slices.
Step 3
Mix the slices of snake gourd and curry leaves into the batter. In a pan of preheated oil at medium heat, carefully fry them until they turn golden brown. If the slices of snake gourd are fully fried, there are no more bubbles around them.
