Step 1

Add softened cream cheese to a mixer bowl and beat at medium speed until smooth.

Step 2

Add sweetened condensed milk and continue beating at medium speed, about 2 minutes.

Step 3

Fold in 1 cup of crushed pineapple with the juice.

Step 4

Pour into graham cracker pie crust.

Step 5

Cover and freeze for 4 to 6 hours or until frozen solid..

Step 6

Remove pie from freezer and garnish with Cool Whip, reserved drained pineapple or fresh diced pineapple and mint leaves.

Step 7

Let the pie stand at room temperature for about 10 minutes before slicing.

Step 8

Return covered pie to the freezer immediately.
