Step 1

Heat cream to boiling point.

Step 2

Beat cream cheese and ¾ cup caster sugar until smooth. Add egg yolks and lemon juice until just mixed.

Step 3

Slowly add cream until mixed.

Step 4

Fold through the pureed and strianed strawberries.

Step 5

Beat egg whites until stiff.

Step 6

Gradually add extra sugar, mixing until dissolved.

Step 7

Fold egg whites through cream mixture until barely combined.

Step 8

Pour into a 20cm springform tin.

Step 9

Freeze overnight.

Step 10

Remove from the freezer 30 minutes before serving and dust with icing sugar.
