This is an absolutely wonderful recipe! I know because of all the substitutions I make and it still comes out great. (I'm trying to reduce the amount of cholesterol, saturated fat, and sugar.) I have made this several times now and have settled on the following: 1/2c Splenda or Stevia instead of brown sugar, twice the cinnamon, 1/2c egg whites instead of 2 eggs, 1c unsweetened vanilla almondmilk instead of the skim, 1/2c margarine instead of butter, and ANY kind of fruit - fresh or frozen (no need to thaw). My family really likes the frozen cherry medley. Thanks much for sharing!

I made this yummy baked oatmeal for breakfast this morning. I made a few adjustments to suit our dietary needs. I only used 3/4 cup Brown sugar & may try even less next time, I used a lot more cinnamon.. 3 tsp & seeing as we are big cinnamon fans I will try one more tsp next time, I used 4 egg whites ( you can buy pasteurized egg whites in carton so you don't have to separate the eggs & waste the yolk) instead of whole eggs & 1/2 cup unsweetened applesauce instead of the butter. I didn't have any peaches so I used half apples & half fresh blueberries. It was moist enough that you really didn't need the extra milk , but I'm sure it would be good with it! I baked it for 35 mins in a glass 9x9 pan so the squares cut easily into 3 inch squares. The changes I made greatly reduce the calories, fat & cholesterol ... Calories go from 322 to 205, Fat from 13g to 1.6g & cholesterol from 75mg to 7mg. Carbs & sodium went down a bit too, so over all a very healthy filling breakfast that makes you feel like you are having something special. We run a B&B & this is going to be added to the breakfast menu!

Definitely a keeper!!!!  My housemate couldn't stop eating it!!!!

My husband thought it was one of the weirdest coffee cakes I had ever made.  But, since then he has discovered that he loves baked oatmeal!

Quick-Oats are not needed btw, as Rolled-Oats work perfectly if you soak them in the milk first hand, adding the wet ingredients to the oats before adding the rest of the dry ingredients.By the time you've added all the ingredients the 30-45 mins added in the oven will cook the oats perfectly!Thanks again for this amazing breakfast ;)

This recipe was easy and delicious!  I left out the blueberries and doubled up on the peaches (I used diced and drained off the juice).

We love this recipe and try to keep all of the ingredients on hand (frozen peaches and blueberries are so easy to keep in the freezer).  We substitute rice milk and dairy-free margarine for the regular milk and butter due to a dairy allergy and use old-fashioned oatmeal...superb!!!

This was, by far, the best oatmeal I've ever had!  I didn't have any apples so I used frozen peaches, blueberries and strawberries.  It was quick, easy and FABULOUS on a snowy day.

very good. used only peaches and blueberries. should have added more. added some wheat brand and ground flax seed. could prob use some vanilla, but it was very tasty!

This is VERY good! I will definitely make again, but I think I'll increase the cinnamon a bit and cut the sugar to 1/2 cup. Kids loved it, and so did I but it was just a bit too sweet for me.

This is amazing! It even reheats well. I made a batch and had it every day for a week. I'm not a huge fan of peaches, so I just doubled the blueberries and apples. A new fav, for sure!

I did not make this with quick-cooking oats because I didn't have any with me but it turned out fine - just a little underbaked. It still tasted fabulous though!

Great recipe but a little dry. Not as sweet as i would have liked. Didn't have apples used frozen Blueberries and canned Apricots. Topped it off with honey and whipped cream to make up for lack of sweetness.

i liked the idea of my own ' oatmeal squares' without all the junk and cost. i wanted something almost portable, and this seemed like it would be.i may not have baked it long enough, mine took the full 45 min., but it did turn out fairly set. i also decreased the butter and sugar by half, while doubling the cinnomon and adding nutmeg.with that said, it was still rather crumbly, at least the peices from the middle were.this was very simple to make. and very tasty.i will make this one more time, and if it's still crumbly i will probably not make it again for this purpose, simply to save on mess.

tomi moore: These are not like dessert bars or the pkg breakfast cookies/bars you get in the store. This is a firmer version of oatmeal you would eat in a bowl. These are not for eating out of hand. You would need to look in the dessert section for what you are describing.

So, after writing my first review, this is my second impression.My family loved these just the way they are. even my husband ate them joyfully.These are so good that they are worth the plate and fork. so, travel food: no, Delightful way to start our morning with whole grains and fruit: yes!Kid pleasing and SO easy to adjust the fruit butter and sugars.

What a great change from the usual plain oatmeal.

My 13 year old daughter and I just finished our first pieces of this and we are in agreement, this is a definite keeper! So much flavor and texture, delicious! As for what I did differently, only a few things. I used only 1/4 c melted butter but added 1/2 cup natural applesauce (1 container). Also, I reduced the brown sugar to 2/3 cup. For the fruit, I chopped 1/2 large granny smith apple, cut 1/2 of a 15oz can of peaches into pieces, added ~1/2 cup frozen blueberries (this leaves me with enough of the apple and peaches to make another batch). It took exactly 45 minutes to bake. Mmm!

I've already made this so many times, it's so delicious! Definitely my favorite breakfast!

I really like baked oatmeal and I really liked the fruit combo in this one. I used old fashioned oats so I added a splash more milk. I halved the butter and added 1/2 cup of applesauce and I also halved the sugar but then sprinkled 2 tbsp of sugar and 1 tsp cinnamon on top. I also added flax seed. But what I really love about baked oatmeal is you can mix it the night before and put it in your fridge. I put it in a cold oven Then turn the oven on to 350 and bake for 45 minutes, just until firm so as not to dry it out.

since I'm trying to eat healthier, I cut the brown sugar and salt in half and planned to do the same with the butter but I forgot to put the butter in at all and it tasted fine!  I also add whatever fruit I have in the house when I make baked oatmeal.  this time, I had dried peaches and apples to use up and they worked fine.  I also used old fashioned oats and baked it in a 13x9 pan (around 20-25 mins).

This recipe is easy and delicious but was a bit too rich for me, so I make it with half the butter and sugar and increase the fruit to a whole apple and about 2/3 cup peaches.  It's delicious when crispy and fresh out of the oven but also tastes great reheated the next day.  Very filling!

I revised this recipe. I use a frozen berry blend which is blueberries, strawberries, and raspberries. We love it
