Step 1

Preheat oven to 350 degrees.

Step 2

Spray a 9 inch square pan with baking spray. Set aside.

Melt butter and chocolate chips in a small saucepan over low heat, stirring constantly.

Remove from heat and set aside.

In a small bowl, whisk together flour and cocoa powder. Set aside.

In the bowl of an electric mixer, combine eggs, sugar, vanilla, and peppermint oil.

Beat on high speed for 10 minutes.

Stir in melted chocolate mixture.

Then stir in flour mixture.

Pour into prepared pan and bake for 30 minutes.

In a small saucepan over low heat, combine chocolate chips and cream.

Cook, stirring constantly, until chocolate is melted and combined with cream.

Remove from heat.

Step 14

Allow to cool slightly, about 10 minutes.

Step 15

Pour ganache over cooled brownies.

Step 16

Top with crushed peppermint.
