Step 1

Preheat the oven to 350 degrees Fahrenheit (175°C) and line two baking sheets with parchment paper. Set aside.

In a large bowl, whisk the oil and eggs until well blended. Add the cake mix and chocolate chips (if using) and mix gently with a spatula until just combined.

Portion the dough with a mini cookie scoop or tablespoon and roll into balls. Place on the prepared baking sheets, spacing them about 2 inches apart.

Bake for 10-12 minutes, until the edges are set and lightly golden. The centers may look slightly underbaked - that’s normal.

Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy!
