Step 1
In a large bowl, combine steak strips with soy sauce, olive oil, hot sauce and pepper. Toss and allow to marinade while you cook potatoes.
Step 3
In a large skillet over medium-high heat, add 1 tablespoon olive oil and 1 tablespoon butter. Once butter is melted, add potatoes. Cook for 8-10 minutes, stirring occasionally, until potatoes are golden and tender. Transfer potatoes to a plate and set aside.
Step 5
Add remaining 2 tablespoons butter and garlic to the same skillet, set to medium-high. Lay steak strips in one layer. Cook for 2 minutes, flipping once, until browned.
Step 7
Return potatoes to the skillet with the steak. Cook until heated through, 1-2 minutes more. Sprinkle with additional salt and pepper, if desired.
Step 9
Remove from heat and sprinkle with fresh thyme.
