Step 1
Scrub potatoes, peel if desired ( I left the skin on) and cut into 1 1/2 inch chunks.
Step 2
Place potatoes in a large pan and cover with cold water. Cook over high heat and bring to a boil. Add 1 teaspoon kosher salt, cook until potatoes are tender, about 15 minutes.
Step 3
Drain well in a colander.
Step 4
Add butter and garlic to the pan and cook over low heat, stirring often about 5 minutes.
Step 5
Add dill, salt, pepper and heavy cream, Stir to combine and continue to cook about 3 - 5 minutes.
Step 6
Add potatoes and mix to combine.
Step 7
Pour potatoes and sauce into a serving dish and garnish with parsley.
